Spring Roll Ninja’s Family Spring Rolls

  • 500g minced pork
  • 300g prawns (ground)
  • 1 carrot (shred)
  • 80g (dried shredded fungus. Soak in warm/hot water to soften) chop to shorter pieces.
  • 60g mung bean vermicelli noodles (soak in warm water til slightly soft, then cut/chop into shorter pieces -3cm
  • 50g small red shallot (finely chopped)
  • 1tbsp chicken powder (usually the Knorr brand)
  • 1tbsp (sugar)
  • 1 tsp (salt)
  • 2 packs spring roll pastry
  • 1 tsp (pepper)
  • 0.5 tbsp osyter sauce
  • 0.5 tbsp fish sauce
  • 2 eggs

Sauce:

Fresh chilli, fresh garlic, sugar (not too much), and fresh lime, fish sauce (a good Viet dipping one). The reason i say “fresh” because the ones in jars and bottle are terrible and would not taste the same.
